📝 Ingredients:
- 130g soft butter
- 1 egg
- 1 teaspoon vanilla extract
- 90g powdered sugar
- 200g all-purpose flour (quantity carefully measured)
- 90g ground pistachios
- A pinch of salt

1. Preheat the oven to 170 degrees Celsius for convection or 180 degrees Celsius for top and bottom heat.
2. In a large bowl, cream the soft butter and powdered sugar.
3. Add the beaten egg and vanilla extract, mix well.
4. Add the ground pistachios and a pinch of salt. Carefully add the flour, possibly less or more. Process the dough into a homogeneous mass.
5. Form about 25 small balls from the dough (approx. 25g per ball) and then shape rectangles, placing them on a baking sheet lined with parchment paper.
6. Gently press each rectangle from the right and left with a dessert fork (not too deep).
7. Bake the cookies in the preheated oven for about 12 minutes until they are lightly golden on the sides.
8. Allow the cookies to cool completely after baking to maintain their shape. Dust with powdered sugar after cooling.
